Slow Cooker Chicken Tikka

 

This is the best Slow Cooker Chicken Tikka I have ever made! (and the easiest)
Takes about 20 mins prep, about 4 hours cook time

Ingredients:
2-4 chicken breasts cut into chunks (I use 2 breasts for myself and the hubby)
1 Large Onion Diced
2-4 cloves Garlic Crushed (or 2-4 tsp Garlic Puree)
2 tsp Ginger paste
4-5 tbsp Tikka paste (we use Pataks)
200-250ml Passata
1 tbsp tomato puree
1 1/2 tsp light brown sugar
100ml double cream (we use lactofree cream)
1 lime  wedged
2 tbsp veg oil (optional for browning chicken)
2 tbsp Garlic Puree (optional for browning chicken)

Direction:
Line your slow cooker (if you do!)
Turn on to low
(Now you can just throw all the ingredients into the slow cooker at this point if you like (apart from the cream, lime and veg oil!), however I like to  brown off my chicken first)
Season your chicken with salt and pepper, Brown it off in vegetable oil in a pan with the garlic puree (2 tbsps) transfer to your slow cooker.
Add the onion, garlic and ginger paste into the pan and cook for a few minutes until the onions go soft. add a splash of water to the pan and scrape off all the bits from the bottom of the pan and add to the slow cooker.
Add the Tikka paste, passata, tomato puree and the sugar to the slow cooker, and give a little stir, cover and cook on low for 3-4 hours
Take lid off and turn up to high for the last 30 minutes to reduce the liquid and thicken the sauce.
Add the cream and let cook for a further 10 minutes.
Serve with Rice and Naan of your choice and Lime wedge on the side. Enjoy!

(The hubby loves his hot sauce and puts it on everything, but said this is so good and just a nice mild heat that he doesn’t want to ruin it with hot sauce lol)
