Apricot Chicken Meatballs. A new tasty incarnation of an absolute classic. The whole family will love it!
Ingredients
Chicken Meatballs

1 kg chicken mince

1 tbsp olive oil

1 egg

1 teaspoon chicken stock powder – I always use the Massel kind.

1 tsp dried thyme

1 tsp dried rosemary
-
1 tsp minced garlic
-
1 tbsp fresh chives, chopped (some of it will be left unchopped to be used as a garnish)

1/2 tsp pepper

2/3 cup dried breadcrumbs
Other Ingredients

1/3 cup plain flour
-
400 ml apricot nectar
-
40 gram sachet French Onion Soup (dry)
Apricot Chicken Meatballs: Instructions

Then put the flour in a small bowl and put this bowl aside awaiting to roll your finished meatballs in.

Put all ingredients of the meatballs in a large bowl and mix thoroughly to blend.

Roll into sizeable meatballs around 20. Rolling each one lightly in the flour and putting them into the slow cooker softly is recommended.

Add apricot nectar and French onion soup and pour over meatballs.

Cook 3hrs on LOW using Tea towel Trick in it.

We served it with creamy mashed potatoes, steamed green beans and carrots, and a little bit of chopped chives on top.
