Ingredients

  • chuck steak → 4 pounds, cut into big chunks
  • carrots → 4 large, cut into thick rounds
  • celery stalks with leaves → 4, chopped thick
  • fresh green beans → 8.9 ounces
  • mixed red, green and yellow capsicum (bell pepper) → 0.7 cups, diced
  • onions → 2 large, diced
  • dried mixed herbs → 0.3 teaspoons
  • vegetable stock → 3.1 cups
  • beef stock powder → 1 tablespoon
  • gravy powder (like Gravox) → 3 tablespoons
  • tomato paste → 2 tablespoons
  • cornflour mixed with a little cold water (for thickening) → 2 tablespoons
  • salt and pepper → 1 pinch

Beef and Veggie Gravy Casserole: Directions

  1. Season the beef: Sprinkle 1 pinch salt and pepper all over your 4-pound chuck steak, cut into big chunks. This helps make it taste really good!
  2. Brown the beef: Cook your beef in a hot pan in small batches until it goes brown on the outside. You don’t have to do this step, but it makes the stew taste even better! Once done, put all the beef into your slow cooker.
  3. Make the gravy base: In the same pan used for the beef, add 2 large diced onions, 2 tablespoons tomato paste, 0.3 teaspoons dried mixed herbs, 1 tablespoon beef stock powder, and half of the 3 tablespoons gravy powder (such as Gravox). Pour in a little of the 3.1 cups vegetable stock and stir everything together, scraping up all those yummy bits from the bottom of the pan.
  4. Load the slow cooker: Put all your chopped veggies — 4 large carrots, cut into thick rounds, 4 celery stalks with leaves, chopped thick, 8.9 ounces fresh green beans, and 0.7 cups mixed red, green and yellow capsicum (bell pepper), diced — into the slow cooker on top of the beef. Pour in the rest of the 3.1 cups vegetable stock, then pour your onion and gravy mix from the pan on top. Give it all a good stir!
  5. Cook slowly: Cover the slow cooker with the lid and let it cook on low heat.
