Chicken Schnitty with BBQ Bacon & Cheese

Chicken Schnitty with BBQ Bacon & Cheese. Crispy chicken schnitzels loaded with smoky bacon, tangy BBQ sauce, and melted cheese — all made easy in the slow cooker!

Servings: 6

What You Need

  • 12 small crumbed chicken schnitzels (burger size)
  • 6 small ripe tomatoes (or 3 big ones), cut into tiny pieces and drained
  • 6 strips of streaky bacon, cut into small pieces
  • 1 tablespoon dried Italian herbs
  • ⅔ cup BBQ sauce
  • 2 cups shredded tasty cheese

How to Make Chicken Schnitty

  1. Put the chicken schnitzels in the slow cooker in one flat layer.
  2. Mix together the tomatoes, bacon, herbs, and BBQ sauce in a bowl. Spoon a good amount of this mix on top of each schnitzel.
  3. Place a tea towel under the slow cooker lid and cook on low for 3 hours and 45 minutes.
  4. Put a big handful of cheese on top of each schnitzel. Cook for 15 more minutes so the cheese melts nicely.
  5. Serve with a fresh salad and chips on the side. Enjoy!

Good to Know

  • You can use big full-size schnitzels instead of small ones if you like.
  • This recipe works great split across two slow cookers if you are cooking for a bigger group.
  • The tea towel under the lid soaks up extra steam — this keeps the schnitzels nice and crispy instead of soft and soggy.
