Chunky Beef & Veggie Casserole. This smells so yummo cooking right now for dinner. Just the thing to have on a cold, wet night, I can’t wait.
I have submitted the recipe to be published on the website, but here it is if anyone wants it.
Ingredients:
Chopped into large chunks
4 small potatoes
2 carrots
Broccoli including stems
1 Large brown onion
1 small to medium sweet potato
½ cup frozen peas & corn
4 Large Mushrooms
Pumpkin
1 Zucchini
You can put whatever veggies you want
1 tin of chopped tomatoes
1 cup beef stock
Veggie salt & cracked pepper
1 teaspoon ground coriander
2 tablespoons worcestershire sauce
1 tablespoon BBQ sauce
1 tablespoon Tomato sauce
½-1 teaspoon onion powder
1 teaspoon ground cumin seeds
500 grams of beef chopped into large chunks (rump)
Optional: Cornflour for thickening
Method:
Chop all the veggies up aand put in slow cooker with meat & spices & sauces. Cook on high 7 hours. Use a paste made with cornflour & water to thicken if needed the last 1-1/2 hour of cooking time.
Serve with bread or rolls.
