Ingredients
- 2 pieces chicken breasts, cut into small pieces
- 3 pieces potatoes, cut into small pieces
- 2 cups small broccoli florets
- 2 cups small cauliflower florets
- 1 cups snow peas or frozen peas
- 1 cups corn
- 2 pieces coconut milk or coconut cream (400ml tins)
- 1.3 cups thickened cream
- 0.3 cups curry powder (use less if you like it mild)

- Add everything to the slow cooker: Put the 2 pieces chicken breasts, cut into small pieces, 3 pieces potatoes, cut into small pieces, 2 cups small broccoli florets, 2 cups small cauliflower florets, 1 cup snow peas or frozen peas, and 1 cup corn into your slow cooker. Don’t worry about the order — just toss it all in!
- Mix the curry sauce: In a bowl, stir together the 2 pieces coconut milk or coconut cream (400ml tins) and 0.3 cup curry powder (use less if you like it mild) until they are well mixed. If you don’t like spicy food, use less curry powder. If you love bold flavor, use the full amount!
- Pour in the sauce and cook: Pour your creamy curry mix over everything in the slow cooker. Put the lid on and set it to LOW. Let it cook for 6 to 390 minutes 390:00 — you don’t have to watch it, just let it do its thing!
- Add the cream: About one hour before it’s done, pour in the 1.3 cups thickened cream. Put the lid on again and let it cook until it’s done. This is what makes the sauce super rich and creamy!

Want it less spicy? Start with just 1 or 2 tablespoons of curry powder and add more next time once you know what you like. You can also swap the veggies for whatever your family enjoys — carrots and zucchini work great too!
