Creamy Garlic Potato, Leek, Cauliflower and Bacon Soup..Delicious
Ingredients:
1 x whole cauliflower
2 x leeks
4 x large potatoes
1 x whole head/bulb garlic
4 x middle rashes bacon
6 x cups water
1 x 600ml thickened cream
Grated Parmesan cheese
Salt & pepper to taste
Method:
Roughly chop all ingredients (*except 1 x rasher of bacon, set aside for garnish), add to slow cooker with water, salt and pepper. Cook on high for 5 hours, or until all ingredients are tender. Blend with stick blender until desired consistency then mix in cream.
Finely dice remaining bacon, add to cold frypan and cook until very crispy, drain on paper towel.
Serve soup with crispy bacon bits and a sprinkle of Parmesan cheese.
