Marry Me Chicken. A creamy and flavorful slow cooker chicken dish made with garlic, herbs, sundried tomatoes, and parmesan cheese. This comforting recipe is rich, simple to prepare, and perfect for a satisfying family dinner.

Ingredients

750 grams chicken thigh fillets (stripped).

1 tbsp butter

2 tsp minced garlic

300 ml cooking cream – see notes below

1 tsp dried oregano
-
1 tsp dried thyme
-
1 tsp ground paprika

1 tablespoon chicken stock powder – I always use the Massel brand.

salt and pepper to season

10 huge fresh basil leaves, sliced into thin strips (with additional ones to serve as a garnish)

200 grams sundried strips of tomatoes (soak them on paper towel)

1/2 cup grated parmesan cheese (reserved to top)
Marry Me Chicken: Instructions

Heat butter in a frying pan then add minced garlic and chicken strips.

Bake in a high temperature for 5-10 minutes to seal/brown chicken (see notes below)

Add to slow cooker

Add all the remaining ingredients, except the cheese, and pour over the chicken. Stir to combine.

Slow cook on low with Tea Towel Trick in place 3hrs.

Add the cheese in the last 30 minutes while the food is cooking.

Sprinkle a little more cheese and add small fresh basil leaves on top.
NOTES:
Cooking cream comes in cold or shelf packs in the supermarkets. When heated it does not split easily. Should you have to use regular cream in this recipe then sprinkle a tsp of cornflour on it beforehand to serve the purpose of reducing the chances of it splitting.
Although the process of browning adds a beautiful colour to the final dish, one can skip it. In case you are not pre browning the chicken then add an extra 30-40 minutes of the slow cooking time.
