Servings: 4

Ingredients

  • 16 small pork chipolata sausages, cut in half (or 8 regular sausages cut into quarters)
  • 17.9 ounces mixed vegetables, small diced (frozen bag works great)
  • 3.6 ounces diced bacon
  • 14.3 ounces crushed tomatoes (canned)
  • 0.5 cups BBQ sauce
  • 1 cup raw macaroni pasta
  • 1.5 cup water (used in two separate steps)
  • 1 cup grated tasty cheese
  • 1 pinch Parmesan cheese, grated (to serve)

One Pot Sausage & Veg Pasta: Steps

  1. Add the vegetables: Put all of your 17.9 ounces mixed vegetables, small diced (frozen bag works great) straight into the bottom of the slow cooker. Spread them out so they sit in a nice even layer.
  2. Add bacon and sausages: Scatter the 3.6 ounces diced bacon over the vegetables. Then add all of your cut 16 small pork chipolata sausages, cut in half (or 8 regular sausages cut into quarters) on top. No need to cook anything first — it all goes in raw!
  3. Mix and pour the sauce: In a bowl or jug, stir together the 14.3 ounces crushed tomatoes (canned), 0.5 cups BBQ sauce, and just half a cup of the 1.5 cups water (used in two separate steps). Pour this mix all over everything in the slow cooker.
  4. Cook on low: Put the lid on and cook on LOW for 4 and a half hours. The sausages will get cooked through and all those flavors will blend together really nicely.
  5. Add water and pasta: After 4.5 hours, pour in the last 1 cup of 1.5 cups water (used in two separate steps) — make sure it is hot water, not cold. Then add your 1 cups raw macaroni pasta and gently stir everything together. The pasta will drink up the water while it cooks.
  6. Cook pasta until soft: Put the lid back on and keep cooking on LOW for about 40 more minutes, or until the pasta is soft enough for your family. Keep a little eye on it — if it looks like it is getting too dry, just pour in an extra half cup of hot water at a time.
  7. Stir in the cheese: When the pasta is ready, stir in your 1 cups grated tasty cheese until it melts all the way through and makes everything creamy and delicious.
  8. Serve and top with Parmesan: Scoop the pasta into bowls and sprinkle a little 1 pinch Parmesan cheese, grated (to serve) on top of each one. That is it — dinner is done, and you only have one pot to wash!
