PALEO VEGAN GRANOLA
Yep…it’s crunchy!! 😋 So delish 🙈🙈
INGREDIENTS:
2 x 1kg bags of Aldi premium mixed nuts
Note: buy any nuts you like (unsalted of course)
1 cup shredded coconut
1/2 cup coconut oil (melted)
1/2 cup maple syrup
1 tablespoon of vanilla
2 teaspoons of ground cinnamon
Let’s see how to cook Slow Cooker PALEO VEGAN GRANOLA
INSTRUCTIONS:
In a food processor or blender, add nuts, chop into small pieces. Do not over blend! I pressed the blitz button about 3-4 times on and off and that was enough. Throw into the slow cooker.
Heat coconut oil in the microwave (20-30 secs was enough), add maple syrup, vanilla and cinnamon until mixed throughly. Then pour over your granola mix sitting in the slow cooker and stir to coat well.
Turn the slow cooker on high for 2 hrs. Lid on with tea towel underneath.
Mix every 15-20 mins to keep circulating the granola around, otherwise some pieces will be burnt or cooked more than others.
Once finished, spread granola mixture evenly onto a baking sheet lined airtight container. Let it fully cool before you cover with the lid until granola has hardened and is crunchy.
Store in an airtight container for weeks!
This would make about 12-15 serves I’d imagine.
Serve with yoghurt and fresh fruit for breakkie 🙊😍🙈
PS: For those that wonder why I didn’t bake it? a) I don’t have an oven and b) because it’s a slow cooking site! 😂😂😂
