Ingredients
- Fillets of skinless chicken thigh or breast → 1 kg
- Olive oil → 1 tbsp
- Drier chilli (or fresh chilli) → 1 tbsp (or 2 tbsp fresh chilli)
- Fresh parsley, chopped → 1 tbsp
- Garlic, minced → 4 cloves
- Minced ginger → 2 tsp
- Juice of lemon → Juice of 1
- Paprika → 1 tbsp
- Dried oregano → 1 tsp
- Salt → 1 tsp
- Cracked black pepper → 1/2 tsp
Peri Peri Chicken: Instructions
- Place chicken fillets (lay) in a non-metal tray/container, with a lid/cover.
- Blend all other ingredients to create marinade.
- Add marinade to chicken and remove the lid.
- Chicken can be marinated for at least one or at most a few hours in fridge overnight.
- To cook, take chicken fillets and put them softly in the slow cooker (marinade/herbs on chicken not replaced still possible).
- Cook on low for 4 hrs approx.
- Peri Peri Chicken is indeed spicy, too hot for my 2yr old but both my 8 and 12yr old loved it.
