Plum Cordial. A sour homemade drink made with Davidson plums, cooked slowly with spices and vinegar. It turns into a strong, tasty syrup that is great for drinks and helps save fruit flavours for later.
Ingredients
- Davidson Plums (Davidson plums are the fruit of a rainforest tree that grows in some parts of Australia). They are not a real plum, and they are VERY sour) → 1kg
- Apple Cider vinegar → 1 litre
- Water → 2 litres
- Sugar → as needed
- Grated Ginger → 1 tablespoon
- Star Anise → 1
Plum Cordial: Instructions
- Add Plums and Cider Vinegar to sc. I used a 6 litre sc.
- Cook on low for 3 hours.
- Add water.
- Cook on low for another 3 hours.
- Place slow cooker on off and leave it overnight.
- Then pour through muslin lined sieve into large saucepan. Add ginger, star anise and sugar. (1 cup of sugar to every cup of liquid.)
- Simmer 15 minutes and bring to a simmer.
- Fill bottles in sterilised bottles.
