Ingredients
- Pumpkin ➤ 1 (approximately the size of a side plate)
- Parsnip ➤ 1
- Potatoes ➤ 2
- Big carrots ➤ 2
- Spinach ➤ 1 big handful
- Kumara (sweet potatoes) ➤ 2
- Broccoli ➤ Half a floret
- Large apples ➤ 2
- Chicken stock powder ➤ 2 tsp
- Water ➤ Just sufficient to cover all the veggies in the slow cooker
- Dry Cous Cous ➤ 1/2 cup (to add at the end)
Savoury Vege Baby: Instructions
- Peel, deseed, and chop all the veggies (the smaller you chop, the faster it cooks; I cut mine the size of a finger) directly into the slow cooker.
- Bring to a boil in a covered dish by adding stock powder and water, cooking until the veggies are easily mashable.
- Add the couscous, stir, and replace the lid to allow it to cool a bit.
- Blitz in a food processor (I used a Nutribullet) until the desired consistency is achieved.
- Divide into serving amounts and freeze what will not be used within a day or two.
