Slow Cooked Beef Cheeks In Red Wine… Thought I’d share my fav recipe. Hope that’s ok.😊
Ingredients:
4-6 beef cheeks – fat trimmed off
2 brown onions diced
4 large carrots chopped chunky
6-8 garlic cloves chopped finely
1 cup red wine (I buy Fifth Leg)
2 cups beef oxo stock
2 tablespoon tomato paste
4 tablespoon brown sugar
3 bay leaves
salt’n’pepper
Directions:
– Sear both sides of beef cheeks, chuck in the slow cooker.
– Cook onion, carrots & garlic for few minutes, til aromatic and onion almost soft, chuck on top of beef cheeks.
– In same pan, add red wine and reduce until alcohol cooks off and you have a nice fruity flavour, approx 4-5 mins.
– To the wine, add beef stock, tomato paste, brown sugar, bay leaves and good pinches of salt’n’pepper. Cook until just boiling, then pour over the cheeks and veggies.
– Cook on high for approx 6 hours, you’ll know its cooked cos the cheeks will be soft and falling apart.
– I use cornflour to thicken the sauce at the end.
– Serve with mashed potato and/or good fresh bread or rolls.
