Slow Cooker Bacon Soup. A warm, hearty bacon soup loaded with chunky vegetables and rich smoky flavor — the kind of bowl that chases away cold winter nights and tastes even better with homemade bread! This bacon soup is one of the easiest and yummiest dinners you can make when the weather outside gets cold. It does not take much work at all — just a few minutes to get things ready, and then your slow cooker takes over and does everything else. When you sit down to eat, you get a big warm bowl of thick, smoky soup that tastes so good it is hard to stop eating. It goes really well with a fresh piece of baked bread on the side — you can dip it right into the soup and soak up all that delicious broth. It is the kind of meal that makes everyone in the house feel cozy and happy, no matter how cold it is outside!
Ingredients
- 1 bacon hock
- 2 parsnips
- 1 kumara
- 4 medium potatoes
- 8 cups chicken stock
- 1 pinch cracked pepper, to taste
Slow Cooker Bacon Soup Making Steps
- Cut the vegetables: Chop the 2 parsnips, 1 kumara, and 4 medium potatoes into medium-sized chunky cubes. You want them big enough to hold their shape while they cook for a long time in the slow cooker.
- Add the bacon hock: Put the 1 bacon hock into the bottom of your slow cooker first. This big piece of smoky meat is going to give the whole soup its amazing flavor as it cooks!
- Add the vegetables: Toss all your chopped vegetables into the slow cooker around and on top of the bacon hock. No need to be fancy about it — just pile them all in!
- Pour in the chicken stock: Pour all 8 cups chicken stock over everything in the slow cooker. Make sure the liquid covers the vegetables and bacon hock as much as possible.
- Season with pepper: Sprinkle in some 1 pinch cracked pepper, to taste. You can always add more at the end, so do not go overboard just yet.
- Cook on low for 7 hours: Put the lid on and set your slow cooker to LOW. Let it cook away for 420 minutes
