Ingredients

  • plain flour → 1 tablespoons
  • dried or fresh thyme → 1 tablespoon
  • diced beef chunks → 17.9 ounces
  • olive oil → 1 tablespoons
  • garlic cloves, peeled and crushed → 3 pieces
  • onions, peeled and sliced → 1.5 pieces
  • carrots, peeled and cut into chunks → 3 pieces
  • mushrooms, cut into chunks → 5 pieces
  • beef stock → 1.7 cups
  • salt and black pepper → 1 pinch
  • cornflour (for thickening) → 3 tablespoons
  • fresh spinach leaves → 1 cup

Slow Cooker Beef Casserole: Steps

  1. Coat the beef: Put the 17.9 ounces diced beef chunks in a bowl and sprinkle the 1 tablespoons plain flour all over it. Mix it around so every piece gets a little coat of flour.
  2. Brown the beef: Pour the 1 tablespoons olive oil into a pot and heat it up. Add the flour-coated beef with a little 1 pinch salt and black pepper. Cook it until the outside turns a nice brown color — but don’t let it cook too long!
  3. Add the veggies: Toss in the 1.5 pieces onions, peeled and sliced, 3 pieces garlic cloves, peeled and crushed, and 3 pieces carrots, peeled and cut into chunks into the same pot. Stir everything together and cook for just a little bit until the onion starts to look golden.
  4. Move to slow cooker: Pour a small splash of 1.7 cups beef stock into the pot and use a spatula to scrape up all the yummy brown bits from the bottom. Pour everything into your slow cooker — this adds so much flavor!
  5. Add the rest: Pour the rest of the 1.7 cups beef stock into the slow cooker. Add the 5 pieces mushrooms, cut into chunks, 1 tablespoon dried or fresh thyme, and a little more 1 pinch salt and black pepper. Give it all a good stir!
  6. Slow cook: Put the lid on your slow cooker and cook everything on LOW for 360 minutes

    . The beef will get super soft and the carrots will be tender too.
  7. Make the thick sauce: When the cooking is done, scoop out about one cup of the liquid from the slow cooker into a small pot. Add the 3 tablespoons cornflour (for thickening) and stir it over heat until the sauce gets a little thick. Pour it back into the slow cooker through a small strainer to remove any lumps.
  8. Add spinach and finish: Stir in the 1 cups fresh spinach leaves and put the lid back on. Let it cook for 15 to 20 minutes more.

  9. Serve it up!: Spoon the casserole over mashed potatoes (try cooking the potatoes with 2 garlic cloves for extra yummy flavor!). Add some buttered bread on the side, and sprinkle a little fresh parsley on top if you like. Enjoy your cozy meal!
