Slow Cooker Chicken Fried Rice. A yummy and easy rice dish made in a slow cooker with chicken, veggies, and eggs!

Ingredients
- 2 tablespoons cooking oil
- 2 cups uncooked rice
- 2 cups chicken stock
- 1 pieces onion → cut into slices
- 1 cup mixed vegetables
- 2 eggs
- 2 cups cooked chicken → cut into pieces (leftover or store-bought rotisserie)
- 1 pinch salt and pepper
Slow Cooker Chicken Fried Rice: Making Steps
- Brown the rice: Put 2 tablespoons cooking oil in a pan and heat it up. Add 2 cups uncooked rice and cook it for about 5 minutes, stirring so it turns a little golden brown. Then put the rice into your slow cooker.
- Add chicken stock: Pour 2 cups chicken stock into the slow cooker with the rice. Turn the slow cooker to HIGH.
- Cook the onion and eggs: In the same pan, cook 1 piece onion, cut into slices until it gets soft. Then crack in 2 eggs and keep stirring while they cook, just like scrambled eggs. Pour everything into the slow cooker.
- Add the vegetables: Toss in 1 cups mixed vegetables and give everything a good stir so it all mixes together nicely.
- Add the chicken: Put in your 2 cups cooked chicken, cut into pieces (leftover or store-bought rotisserie) and stir it all through. Sprinkle in 1 pinch salt and pepper however much you like.
- Cook it all together: Put the lid on the slow cooker, but first place a clean tea towel under the lid — this soaks up extra steam and keeps the rice from getting too wet. Cook on HIGH for about 120 minutes 120:00.
