Slow Cooker Lamb Shank
Ingredients:
4 x lamb shanks
2 x brown onions
4 x cloves garlic (chopped or crushed)
2 x teaspoon of minced ginger
3 x tablespoons of Worcestershire sauce
1 x cup red wine
1 x 1/2 cup of plum jam
2 x sprigs of thyme
2 x long sprigs of rosemary
Method.
Brown off the shanks with some flour, salt and pepper in some olive oil, then transfer to the slow cooker. Add a little more olive oil & cook the onion and garlic & ginger until soft, add the sauce and jam and wine, on low heat simmer until jam has dissolved. Add a bit of water if necessary. Add the fresh herbs on top of the shanks.Pour the liquid over the shanks and cook on low for 6 hours.
Serve with cheese and parsley mashed potatoes.
