SLOW COOKER SEEDED WHOLEMEAL LOAF
Ingredients:
100g seeded wholemeal flour
100g wholemeal flour
100g spelt flour
75g strong white flour
75g mixed seeds
5g quick yeast
Pinch of salt
¾ tablespoon treacle
250ml of warm water
Methods:
Add flour, yeast, salt, yeast, mixed seeds to bowl. Mix. Separately mix treacle into warm water. Add to dry mixture. Stir well, then finish mixing with hands. Knead on floured surface for 5 minutes/100 kneads. Lightly oil bowl, add dough, cover with oiled cling film. Leave to rise for 60 mins. Turn slow cooker on low to warm a little. Remember to switch off before you put dough in for second rise. Tip dough onto floured surface and pound air out of it. Knead a second time for 5 mins/100 kneads. Line slow cooker with round cake liner. Put dough in slow cooker and leave to rise for 40 minutes. Turn slow cooker on, high. Bake for approx. 75 mins until centre of bread is at 195/200F. Take loaf out and place under grill for about 5 minutes to brown top – watch carefully as you do this. Remove and leave loaf to wholly cool before using.
