Sweet & Sour Whole Chicken. A juicy slow-cooked whole chicken with tangy sweet and sour sauce, pineapple, and capsicum delivering bold comforting flavours effortlessly.
Ingredients
- Large chicken (2kg) → 1
- Pineapple pieces in juice (juice reserved) → 1 x 440g
- Red capsicum (pepper) diced → 1
- Pineapple juice (reserved out of can) → 1/2 cup
- Tomato sauce/ketchup → 1/4 cup
- White vinegar → 1/4 cup
- Sugar → 1/4 cup
- Reduced salt soy sauce → 2 tbsp
Sweet & Sour Whole Chicken: Instructions
- Place the whole chicken at the bottom of the slow cooker.
- Put pineapple and diced capsicum around chicken.
- Cook on HIGH for 2 hrs.
- When 2 hours had elapsed I emptied the liquid from the slow cooker (a whole chicken sheds heaps) and left the chicken, pineapple and capsicum in the slow cooker.
- Add canned pineapple juice (reserved), tomato sauce, vinegar, sugar and soy sauce and then pour it over chicken in the slow cooker.
- Keep on cooking but this time on LOW another 4 hrs.
- Prudently remove chicken at the expiry of the cooking period (you should take caution to support as you do so since the chicken will be fall apart tender, I use two egg flips, one under the chicken at either end to hold it up, as I remove swiftly to a serving dish.
- Liquid strain liquid in slow cooker and remove solids.
- Pour sour liquids into a saucepan. Boil then simmer (with stirring) to half the amount of sauce to a shiny sauce.
- Ours were served with steamed broccolini and rice.
