Thai Chicken Meatballs in a Peanut Sauce. Thai chicken meatballs in a creamy peanut sauce right out of the slow cooker are absolutely beautiful!
Ingredients
Meatball Recipe

500 gram chicken mince

1/2 cup fine bread crumbs

1 tbsp minced ginger
-
1 tsp minced garlic
-
1 tbsp soy sauce
-
1 egg
-
1/4 tsp each of pepper and salt
-
1 tbsp fine chopped coriander
-
1/2 large red chilli (seeds taken out), FINE chopped.

extra coriander and chilli to serve as garnish.
Sauce Ingredients

400 ml coconut cream
-
1 tbsp cornflour combined with the coconut cream.

1/2 cup peanut butter (heat for 30 seconds in microwave oven until smooth)

1 tbsp lime juice
-
2 tbsp soy sauce
-
1 tbsp honey
-
1 tbsp red Thai chilli paste – I have Ayam.
Thai Chicken Meatballs: Instructions

Put all ingredients of the meatballs in a large bowl and roll into balls in about 30 balls.

Place these balls in slow cooker but spaced out gently where possible.

Add all ingredients of the sauce and pour over meatballs.

Bake at low temperature (4hrs, separating/ stirring at the end of 2hrs)

we put our with rice and steamed green beans and plenty of the tasty sauce poured over + garnish.

There is no need to pre cook or brown meatballs. Slow cook them from raw. Simply do not disturb them within the first 2hrs. When you put them in leave them be. Then, after approximately 2hrs of cooking, they will be solid and closed and you can stir/ move them softly or disperse them around without the danger of breaking them etc.
