Siesta Salsa Chicken is an easy slow cooker meal made with tender chicken, salsa, refried beans, corn, and taco seasoning. Ingredients

1 kg skinless chicken thigh fillets in strips.

1 red capsicum, diced

185 gram of drained can of kernals of corn.

435 gram can of refried beans – we use mild flavour, however, it can be hot as well.

300 gram jar salsa – we use mild but can be hot upon request

35 gram sachet of taco seasoning – we use mild, but may be hot, as you wish.
Siesta Salsa Chicken: Instructions

Add all ingredients in slow cooker to mix thoroughly.

Cook on LOW for 5hrs
Serving Suggestions:
- Beautiful is served on rice with a dollop of sour cream on top, should you wish!
- It can also be thrown on wraps of tortillas with a mixture of salad leaves, tomatoes and avocadoes to make it an enjoyable family meal!
Notes
Set the level of heat to spiciness of your family.
Thigh can be replaced with breast but I suggest thigh to be used to ensure maximum results as breast has a tendency to dry up. Instead, I would use breast and spend 3-4 hours cooking.
