3 kgs beef short ribs – removed off the extra fat.

1/2 cup good quality bourbon

1/2 cup good quality maple syrup

1/2 cup dark brown sugar

1 tbsp Cajun seasoning

50 grams salted butter

Heat a deep fry pan or flat bbq grill till it gets smoking.

Sear off ribs on all sides.

Add bourbon, sugar, and maple syrup into a medium saucepan and cook over medium heat, stirring continuously until it reaches a boil.

Bring down to low heat and cook for half. Use pastry brush to brush sides to avoid the burning of sugars.

After it is cooked, add butter and Cajun seasoning.

Add ribs to slow cooker and pour in sauce.
