Peri Peri Chicken

A bold, spicy peri peri chicken slow cooked to tender perfection with garlic, chilli, and herbs for a rich flavorful meal.

A Portuguese slow cooker chicken recipe with a spicy twist.

Ingredients

  • Fillets of skinless chicken thigh or breast → 1 kg
  • Olive oil → 1 tbsp
  • Drier chilli (or fresh chilli) → 1 tbsp (or 2 tbsp fresh chilli)
  • Fresh parsley, chopped → 1 tbsp
  • Garlic, minced → 4 cloves
  • Minced ginger → 2 tsp
  • Juice of lemon → Juice of 1
  • Paprika → 1 tbsp
  • Dried oregano → 1 tsp
  • Salt → 1 tsp
  • Cracked black pepper → 1/2 tsp

Peri Peri Chicken: Instructions

  1. Place chicken fillets (lay) in a non-metal tray/container, with a lid/cover.
  2. Blend all other ingredients to create marinade.
  3. Add marinade to chicken and remove the lid.
  4. Chicken can be marinated for at least one or at most a few hours in fridge overnight.
  5. To cook, take chicken fillets and put them softly in the slow cooker (marinade/herbs on chicken not replaced still possible).
  6. Cook on low for 4 hrs approx.
  7. Peri Peri Chicken is indeed spicy, too hot for my 2yr old but both my 8 and 12yr old loved it.
