This recipe is one of those meals that looks and tastes like you really worked hard, but the truth is, it couldn’t be easier. You just layer the beef and tomatoes into the slow cooker, toss in some garlic and parsley, and let it do its thing. No need to add water, no need to stir every five minutes, no need to stress. The tomatoes get soft and juicy, the beef turns melt-in-your-mouth tender, and all those tasty juices come together into a thick, rich gravy at the end. Ingredients

  • 3.7 pounds BBQ steak or round steak
  • 5 medium-sized tomatoes, sliced
  • 3 pieces of garlic cloves (fresh or dried)
  • 0.8 pieces bunch fresh parsley, chopped
  • 2 teaspoons gravy powder (to thicken)
  • 1 pinch cracked black pepper
  • 1 pinch salt (optional)

Beef with Tomatoes in Gravy: Directions

  1. Layer everything in the slow cooker: Start layering your ingredients into the slow cooker. Put down some 3.7 pounds of BBQ steak or round steak, then some 5 pieces of medium tomatoes, sliced, then a little 3 pieces of garlic cloves (fresh or dried) and 0.8 pieces bunch fresh parsley, chopped. Keep going in layers like that until you’ve used everything up. DO NOT add any water — the meat and tomatoes will make plenty of their own juice as they cook.
  2. Season the top: Once everything is layered in, sprinkle 1 pinch cracked black pepper and a little 1 pinch salt (optional) over the very top.
  3. Cook on HIGH: Put the lid on your slow cooker and turn it to HIGH. Let it cook for 5 to 300 minutes (300:00). You’ll know it’s ready when the beef is really soft and easy to pull apart.
  4. Make the gravy: When the meat is tender, scoop a few spoonfuls of the juices from the pot into a small bowl. Stir in the 2 teaspoons of gravy powder (to thicken) and mix it well until smooth, then pour it back into the slow cooker. Gently move the meat around so the sauce can thicken up nicely.
  5. Serve it up: Spoon the beef and tomato gravy over mashed potatoes, your favourite vegetables, or even chips. Make sure you get plenty of that yummy sauce on top!

Notes

  • Don’t add water! The tomatoes and meat release a lot of liquid on their own — adding water will make it too watery.
  • Use as much or as little parsley as you like — it’s totally up to you.
  • Round steak or any budget cut of beef works perfectly here. Slow cooking makes even tough cuts super tender.
  • Want more gravy? Just add a little extra gravy powder mixed with some of the cooking juices.
  • Leftovers taste even better the next day!
