Chicken Schnitty with BBQ Bacon & Cheese. Crispy chicken schnitzels loaded with smoky bacon, tangy BBQ sauce, and melted cheese — all made easy in the slow cooker!
Servings: 6
What You Need
- 12 small crumbed chicken schnitzels (burger size)
- 6 small ripe tomatoes (or 3 big ones), cut into tiny pieces and drained
- 6 strips of streaky bacon, cut into small pieces
- 1 tablespoon dried Italian herbs
- ⅔ cup BBQ sauce
- 2 cups shredded tasty cheese
How to Make Chicken Schnitty
- Put the chicken schnitzels in the slow cooker in one flat layer.
- Mix together the tomatoes, bacon, herbs, and BBQ sauce in a bowl. Spoon a good amount of this mix on top of each schnitzel.
- Place a tea towel under the slow cooker lid and cook on low for 3 hours and 45 minutes.
- Put a big handful of cheese on top of each schnitzel. Cook for 15 more minutes so the cheese melts nicely.
- Serve with a fresh salad and chips on the side. Enjoy!
Good to Know
- You can use big full-size schnitzels instead of small ones if you like.
- This recipe works great split across two slow cookers if you are cooking for a bigger group.
- The tea towel under the lid soaks up extra steam — this keeps the schnitzels nice and crispy instead of soft and soggy.
