Vermicelli Noodles with Chicken Soup

Vermicelli Noodles with Chicken Soup. This warm chicken soup with soft noodles is easy to make and tastes really yummy on a cold day!

What You Need

  • 4 to 8 chicken thighs, cut into thin pieces
  • 6 cups of chicken broth
  • 2 cups of water (add this if your soup needs more liquid)
  • 2 onions, chopped into small pieces
  • Garlic, as much as you like
  • 2 teaspoons of curry powder
  • 1/4 cup of soy sauce
  • 1/2 cup of oyster sauce
  • 1 packet of chicken noodle soup mix (or a few broth cubes)
  • Vermicelli noodles — use only half of a 200g packet (the whole packet will drink up all your soup!)
  • 2 cups of frozen vegetables like cauliflower, green beans, and carrots (or add more if you want)

How To Make Vermicelli Noodles with Chicken Soup

  1. Cook the chopped onion and garlic in a pan until they turn brown. Then add the chicken and cook it until it gets brown too.
  2. Put everything into your slow cooker — but not the noodles yet!
  3. Turn the slow cooker to High and cook for 3 and a half hours.
  4. About 20 minutes before the soup is ready, put the noodles on top of the soup. Stir them a few times while they get soft.
  5. Your soup will smell amazing and taste even better!

Important

⚠️ Don’t cook the noodles too long or they will get mushy and fall apart!
