Things You Need

  • 400 ml of coconut milk (creamy white liquid from coconuts)
  • 2 small spoons of cornflour mixed into the coconut milk
  • 1 big spoon of brown sugar
  • 1 big spoon of fish sauce (makes things taste salty and good)
  • 1 big spoon of lime juice (sour juice from a lime)
  • 1.5 cups of vegetable stock (vegetable water)
  • 1 cup of broccoli pieces (green vegetable)
  • 300 grams of ramen noodles (soft noodles)
  • 2 eggs
  • 2 pieces of pork (about 150-200 grams each) – you can use pork belly too
  • Green onions cut into small pieces (for the top)
  • Sesame seeds (tiny seeds for decoration)
  • Spicy chilli oil (oil with hot peppers in it)

Steps to Make Spicy Pork Noodle Soup

  1. Pour the curry paste, coconut milk, cornflour, sugar, fish sauce, lime juice, and vegetable stock into your slow cooker. Stir everything together. Close the lid and cook on LOW for 2 hours and 30 minutes.
  2. Add the broccoli pieces to the slow cooker. Keep cooking for 30 more minutes.
  3. Cook your pork pieces in the air fryer at 200 degrees for 15 minutes. Turn them over halfway through so they get crispy on both sides. Rinse your ramen noodles with warm water and put them on a plate. Boil your eggs in a pot of water for about 7 minutes. Then put them in cool water so they stop cooking.
  4. In the last 5 minutes of cooking, add your ramen noodles to the slow cooker to warm them up.
  5. Pour the soup and noodles into two bowls. Put half of the noodles, broccoli, and soup in each bowl.
  6. Cut your pork into pieces and put it on top of the soup. Cut your eggs in half and put one egg on top of each bowl.
  7. Put a little bit of spicy chilli oil on top of each egg. Sprinkle green onion pieces and sesame seeds on top.
  8. Eat it right away while it’s hot and enjoy every bite!

Helpful Tips

  • The red curry paste makes the soup spicy, so be careful if you don’t like hot food!
  • You can use any kind of pork you like. Pork belly is really yummy.
  • The eggs are soft-boiled, which means the inside is still a little runny. If you like hard-boiled eggs, cook them for 10-12 minutes instead.
  • Make sure you eat this soup right away because the noodles get soft if you wait too long.
