Ingredients

  • 1 kg pork belly slices, cut into 4–5 cm cubes
  • 250 ml chicken or vegetable stock
  • 5 cm piece of ginger, peeled and finely chopped
  • 3 cloves garlic, chopped or crushed
  • 2 tablespoons rice wine
  • Salt and pepper, to taste
  • 1 red chili, finely chopped
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 4 tablespoons soy sauce

Sticky Chinese Pork Belly: Instructions

  1. Mix the sauce: In a big bowl, add the ginger, garlic, rice wine, salt, pepper, chili, honey, brown sugar, and soy sauce. Do not add the stock yet. Stir everything well until it looks smooth and mixed.
  2. Coat the pork: Put the pork belly cubes into the bowl with the sauce. Use a spoon or your hands to coat every piece well, making sure the sauce covers all sides.
  3. Let it rest: Cover the bowl with a lid or plastic wrap. Place it in the fridge for a few hours so the pork can soak up all the yummy flavors.
  4. Get the slow cooker ready: Pour the marinated pork and all the sauce into the slow cooker. Add the stock too. Stir gently so everything mixes together evenly.
  5. Cook it slow: Set the slow cooker to low heat. Let it cook for 4 hours. For the last 1 hour, cover the top with a clean tea towel to help trap the steam and heat.
  6. Serve and enjoy: Once the pork is soft and sticky, take it out. Serve it with your favorite side dishes, like rice or veggies, and enjoy your tasty meal!
