Slow Cooker Apricot Chicken

This Slow Cooker Apricot Chicken is soft, juicy, and full of yummy flavor. You just put everything in the slow cooker and let it do all the work! It has a sweet and tangy taste that kids and grown-ups both love. It’s easy to make, needs only a few things from your kitchen, and fills your house with a nice smell all day. Perfect for busy days when you want a warm, tasty dinner without much fuss!

Cook Time: 4 hours 30 minutes

Ingredients

  • 1 kg chicken (pick what you like — drumsticks, thighs, breast pieces, or wings)
  • 1 packet (40 g) French onion soup mix, dry
  • 1 onion, chopped into small pieces
  • Choose one:
    • 425ml tin of apricot nectar, or
    • 1 jar of apricot jam, or
    • 1 tin of apricot pieces in juice

Slow Cooker Apricot Chicken: Instructions

  1. Get the slow cooker ready. Place the chicken pieces neatly at the bottom of the slow cooker bowl. Sprinkle the chopped onion all over the chicken.
  2. Mix the sauce. In a small bowl, stir together the French onion soup mix and your chosen apricot ingredient (nectar, jam, or tinned pieces) until it’s well combined and smooth.
  3. Pour it over. Slowly pour the apricot sauce over the chicken. Try to cover most of the chicken so it gets full of flavor while it cooks.
  4. Cook low and slow. Put the lid on the slow cooker and set it to low heat. Let it cook for about 4 to 5 hours, until the chicken is soft and fully cooked through.
  5. Serve and enjoy. Once done, check the chicken is tender and cooked all the way. Serve it warm with rice, mashed potatoes, or veggies on the side.

Notes

If you’re using chicken thigh fillets, try stirring in some steamed vegetables near the end of cooking, just like shown in the picture above.
