Anzac Self Saucing Pudding. In honour of our Anzacs, I thought I’d have a crack at making Anzac Self Saucing Pudding. I would normally make Anzac biscuits but couldn’t be buggard after work today, aaannnd we really felt like pudding. 😂
Ingredients:
1 1/2 cups SR flour
100g butter
1 cup rolled oats
1/2 cup coconut
1/2 cup caster sugar
1 cup milk
1 egg
2.5 cups boiling water
1 teaspoon vanilla essence
Sauce
1 tablespoon golden syrup
50gm butter
1/2 cup golden syrup
1/4 cup brown sugar
Directions:
In a bowl, add SR flour and butter. Rub butter into flour with fingertips. Add remaining dry ingredients.
In a jug, combine wet ingredients and mix well. Add wet ingredients to dry & mix with wooden spoon and Add to 3.5L slow cooker.
Add all sauce ingredients to a jug and mix till butter has melted. Pour over batter, over a back of a spoon.
Cook on high with a tea towel under the lid for 1.5 hours or until pudding is cooked.
