Bacon and Cheese Loaf.  It worked out better than expected, but to be fair, I didn’t expect much because I suck at baking 😁😁😁. I would go so far as to say it must be foolproof because I REALLY suck at baking. Partner loved it and asked for it to be put on regular menu rotation 🙄😉😁

Ingredients:

3 cups self raising flour
2 cups natural yoghurt
1/3 cup finely grated parmesan cheese
1 tsp onion powder
1 tsp garlic powder
Couple of shakes of dried Italian herbs
Good pinch of salt
Generous quantity Bertocchi bacon ends chopped
Generous handful Perfect Italiano Perfect Bakes grated cheese mix

2 Ingredient Dough Bacon and Cheese Loaf

Method:

Sift all dry ingredients into a bowl. Add yoghurt and combine well. Turn onto a floured board and knead for about two minutes or until dough bounces back if you press your fingers into it a bit. Mine was super sticky as I kneaded so I worked a bit more flour into it.

Give it a friendly slap for good luck. Spray and line your SC with baking paper and place dough inside. Try and manipulate it so it stretches out to the edges of the cooker and flattens but try not to press down too heavily on it. Add your bacon and cheese. Place a clean tea towel under the lid and cook for 2.5 hours on High. Insert skewer to check doneness.

Place under hot griller to brown the top. Eat with gusto
Next time I think I will try a pizza inspired olive loaf with tomato relish, small cubes of salami and cheese on top.
