Slow Cooker Beef Stew and Dumplings
We’ve had our slow cooker for a few years but its only been used a few times and just sits gathering dust. I joined this group for some much needed inspiration, and that’s what I got!
Knowing we had some diced braising beef in the freezer, I decided to have a go at Beef Stew and Dumplings and it was yum 😋!
Ingredients:
700g diced braising beef
5 potato’s
4 carrots
2 onions
30g plain flour
2 cloves of crushed garlic
1tsp Thyme
1tsp Oregano
1tsp Basil
Salt & pepper
400ml beef stock
3 tbsp tomato puree
1 tbsp Worcestershire sauce
1 tsp garlic granules
Dumplings (suet free)
150g self raising flour
50g frozen butter
1/2 tsp garlic granules
1/2 tsp mixed herbs
Cold water
Method:
Started off by preheating the slow cooker, then in went the beef, followed by the seasoned flour and garlic granules. Gave it all a good coat and then in went the chopped veg, Tom puree crushed garlic, Thyme, Oregano, Basil, Worcestershire sauce, beef stock, salt and pepper.
Gave it all a stir and then put the lid on and left to cook on low for 10 hours.
45 minutes before it was ready I mixed the flour, herbs and garlic granules into a bowl and grated the frozen butter into it. I then slowly added some water to bring it together, then formed 8 balls and dropped them on top of the stew and left to cook for the remaining 30 minutes.
Served up with some steamed broccoli, went down a treat. 😄
