Slow Cooker Beef Stew Recipe With Red Wine…..

Slow cooked beef stew served on a bed of creamy mash and a side of buttery vegetables.

(Ingredients)

600g diced beef
1 large onion (finely diced)
3 garlic cloves (finely chopped)
1 tbsp tomato purée
400g chopped tomatoes
1 fresh bay leaf
1/2 glass red wine (optional)
1 tsp freshly chopped thyme
300g beef stock (500g if doing on stove top)
1 tsp paprika
1 tsp Italian seasoning
Chilli flakes (to taste)
Salt/pepper to taste
1 tsp sugar
2 tbsp plain flour
2 tbsp Creme fraiche (optional)
Fresh parsley
Vegetable oil

(Method)

Season the meat with salt pepper, sear meat on all sides. Add some vegetable oil into a pan/pot and cook the onions for a few minutes on medium heat, season with salt. Add in the garlic and cook for another minute or so, Add in the thyme, paprika, Italian seasoning, chilli flakes, bay, tomato paste, red wine, sugar and salt/pepper, give everything a good stir and cook for another few minutes.
(Slow cooker)
Coat the seared beef with the flour before placing into the slow cooker pot. Pour the mixture from the pan in there too, stir to combine. Pour in the chopped tomatoes, beef stock and give everything a good stir. Cook on low for 8-10 hours. Add in the Creme fraiche 10 mins before serving and the fresh parsley too.

(Stove top)
Add the red wine into the pot and cook for a few minutes before adding in the chopped tomatoes and beef stock, stir to combine. Coat the beef in the flour and add into the pot. Place a lid on and cook on a low heat for about 2 1/2 hours or until the beef is tender, stirring occasionally. Add the Creme fraiche and parsley 5 mins before serving.
