Cheesy Bacon and Relish Focaccia. A rich and flavorful focaccia with cheesy bacon layers and tangy tomato relish, perfectly baked in a slow cooker for comfort.

Servings: 1 large bread loaf

Ingredients

  • SR flour → 3 cups

  • Salt → pinch

  • Warm water → 2 cups

  • Diced bacon → 2 x 150g

  • Tomato relish → 250g

  • Grated tasty cheese → 2 cups

Cheesy Bacon and Relish Focaccia: Instructions

  1. Line the slow cooker with non-stick baking paper and spray lightly with non-stick spray.

  2. Add the flour, salt, and water into a big bowl and stir to form the dough (sticky texture is fine).

  3. Take one 150g portion of bacon, add 1 cup of grated cheese and one portion of the dough, and blend thoroughly.

  4. Pour the mixture onto the baking paper in the slow cooker and flatten over the bottom (used a 7L slow cooker).

  5. Spread the tomato relish evenly on top of the dough.

  6. Lay the second 150g portion of bacon over the relish.

  7. Sprinkle the second cup of grated cheese on top.

  8. Bake under high heat with a tea towel on top around the sauce in the pot for about 1 hour 45 minutes, or until cooked.

  9. Note: Using a smaller slow cooker may require longer baking as the focaccia will be thicker.
