I start mine on high till it starts to get hot then I turn it down to low Till we are ready to eat.

Slow cooker Chilli

Slow cooker Chilli served with Rice and Tortilla Chips

In my opinion it’s the best way to cook Chilli …Slowly and on low.

Ingredients :

500g pack of lean mincemeat ( i used only half)
1 green pepper – Sliced thick
1 medium red onion – Sliced thick
2 garlic cloves – Crushed and chopped
1 medium sized Red chilli – Chopped finely with the seeds
1 400g Tin of chopped tomatoes
1 400g tin of kidney beans – Drained ( I used only Half)
1 tablespoon of Paprika
1 teaspoon of ground cumin
1 teaspoon of Tomato puree
1 teaspoon hot chilli powder ( I like my chilli spicy)
Salt & Black Pepper to season.

Method :

I fried my mincemeat on a medium heat for a couple of minutes beforehand just to drain out any fat & oils from the meat, I added the Garlic and chilli at the few last seconds to just cook off a tad.
I then drained and popped the mix into the slow cooker, I then added the chopped tomatoes, Kidney beans, Paprika, cumin, hot chilli powder and the Tomato puree. Stirred it all and popped the lid on and cooked on low for 5 hours and I then added my Green Peppers and and red onion and cooked for 1 hour. I like my Peppers and onions with a slight crunch, you can always add your peppers and onions at the start if you want. Then cook for another hour and serve.

Also this dish was very spicy as I love spice but if you wish to lower the heat then i would use only the fresh chilli and take out the seeds.
