Potato Bacon and Corn Chowder

Slow Cooker Potato Bacon and Corn Chowder. My go-to favourite on a cold winters day..

Ingredients:

Diced potatoes
Corn on cob
Chicken stock
Cut the corn kernels off and return to pot
Add cream
Some fried bacon
Spring onion
Pepper
And that’s literally all I do!

Directions:

I just put diced potatoes,
Corn on the cob, chicken stock in the slow cooker until potatoes go soft and then add cream, fried bacon and spring onions . It’s really basic but so yummy!!

It took about 6 hours on high. I think the softer the better,
I could have let it got for another hour or so but I was so hungry!
I’ve tried this many times and find that the longer I leave the potatoes with the corn in the stock, the more flavour it has at the end when I add cream etc.

Question:               Does this freeze ok ?

Answer:                  I haven’t tried freezing it yet sorry.

Question:              how much chicken stock please.

Answer:                 I use vegeta or massel chicken stock powder.
I honestly don’t measure, I just do it to taste the way I like it..

Question:              any stock?

Answer:                  yes any stock will do!

Question:            Is this on high? How long did this pot (pick) take?

Answer:               yep on high for about 6 hours. I just went by when the potatoes were soft then cut the corn kernels off and put everything else in.

Question:           Could I ask if you could advise on quantities and time/temps?

Answer:               I just cooked the corn with potatoes on high for about 6 hours.
Sorry I kind of just threw it all together and hoped for the best 😂 I didn’t measure anything either I just did it to taste and the consistency that I like. ​
