Slow Cooked ‘Roast’ Lamb; This lamb is soft and juicy. It cooks slowly all day. Garlic, rosemary, and mint give it great taste. It is perfect with roast vegetables.

Ingredients

  • 1 – 2kg piece of lamb roast

  • 2-3 cloves fresh garlic

  • Sprigs of fresh Rosemary

  • 2 tsp beef stock powder

  • 1/2 cup hot water

  • 1-2 tbsp mint sauce (or some fresh mint leaves of your choice)

Slow Cooked ‘Roast’ Lamb: Instructions

  1. One has to make some small incisions on the lamb, around 1-2cm deep, and in every incision add half a piece of garlic clove, and a few strands of rosemary.

  2. Put lamb in slow cooker bowl.

  3. Incorporate the mix stock powder with water, pour into the bottom of the slow cooker bowl, and add mint sauce and mix with this liquid.

  4. Bake at low heat between 6-8hrs depending on your oven.

  5. The color was effected by juices of the bowl spooned over my lamb several times in the course of the day but is optional.

  6. Before carving, remove garlic/rosemary on meat.

  7. Beautiful was accompanied with pan juice gravy and roast vegetables.

  8. The way you position your roast vegetables beneath the lamb as well is your choice when you are placing this dish as and when you want to.
