SLOW COOKER BUTTER CHICKEN
Ingredients:
4 large chicken breasts (cut quite chunky)
2 teaspoons of ground ginger
3 teaspoons of minced garlic
2 heaped tablespoons of red curry paste
2 teaspoons of curry powder
1 teaspoon of salt
2 teaspoons of turmeric
1 brown onion (diced)
2 cups of coconut cream
1 small tin of tomato paste
1 teaspoon of cayenne pepper ( depending if you want some kick to it.. mine gave quite a punch)
Thickened cream to taste at the very end if too strong
Olive oil
Butter
Method:
Cook onion in butter until softens a little, add garlic, red curry paste and tomato paste until fragrant.. place in slow cooker.
Lightly seal chicken pieces…place in slow cooker
Gather all dry ingredients and cook in a splash of olive oil until fragrant…add to slow cooker.
Pour coconut cream in slow cooker and combine everything well
Cook 8hrs on low.
Serve with rice and naan bread.
Remember if it’s too strong chuck in some thickened cream to taste at the end .
