SLOW COOKER IRISH BEEF STEW

SLOW COOKER IRISH BEEF STEW 

My version of an Irish Stew slow cooking away. It has the house smelling amazing 

Ingredients:
1 kilo of gravy beef and cubed
1/2 cup of plain flour with salt and pepper added
5 -6 medium potatoes peeled and chunky chopped
3-4 carrots, peeled and chopped chunky
8-10 button mushrooms halved
2 brown onions chopped roughly
2 celery stalks cut chunky pieces
2-3 small sweet potato cut chunky
1/2 cup of frozen peas
2 cups of beef stock
6 cloves of garlic crushed
1 cup of Guinness
1 cup of Red wine
1 tablespoon of Worcestershire sauce
1/4 cup of tomato paste
2 teaspoon of dried thyme
Salt & pepper for seasoning

Directions:
In a pan, heat some olive oil and sauté onions and garlic, add to slow cooker.
In a bowl or a plastic bag, add flour and meat, dust to cover meat and brown off in pan with more oil if needed and add to slow cooker. Put excess flour in bag into the slow cooker. Tip red wine into pan and let it simmer for
A minute and then add stock, Guinness, tomato paste, Worcester and thyme and simmer for another minute. Add all prepared vegetables to slow cooker and pour liquid into slow cooker. Season with salt & pepper. Cook on low for 3-4hrs with no tea towel and then the remainder of time place a clean dry tea under the lid.
Cook on low for around 8 hours. Enjoy
