Slow Cooker Lamb Ragu !Another hit with the entire family !
This fed 6!
Ingredients:
4 lamb shanks
1 red onion sliced
Punnet Cherry tomatoes – sliced in half
3 teaspoons minced garlic
3 tablespoons tomato paste
1/2 cup red wine
1 fennel bulb diced
1 1/2 cup vegetable stock
2 bay leaves
2 sprigs rosemary
Sprinkle of dried Italian herbs!
Pappardelle pasta (I used 2 fresh packets as I’m feeding 6 – that include several teenage boys )
Directions:
I put all ingredients into slow cooker except for the pasta!
Cooked on low for 8 hours!
Cooked pasta according to packet !
While pasta was boiling I took out the shank bones (meat fell and the bone) and mixed it all in – breaking apart the meat!
I then stirred in the pasta and served!
