Made this Slow Cooker Recipe for tea tonight 😋 It was AMAZING! Somebody posted the recipe on here. I made it slightly differently due to ingredients I had at home & because I’m lazy…
Ingredients & Method:
Cut 2lbs of chicken breast into inch pieces.
Chuck it in a zip lock food bag with 3 tbsp of corn flours & 1tsp of black pepper & shake.
Heat some olive oil (I used garlic infused olive oil) in a pan & brown the chicken for a few minutes on each side & put in the slowcooker.
Then you just need to mix the following ingredients in a bowl & pour over the chicken…
1/2 cup of soy sauce
4 tbsp rice wine vinegar
4 tbsp of ketchup
2 tbsp of sweet chilli sauce
2 cloves of garlic (I used very lazy garlic)
1tsp fresh grated ginger (I used very lazy ginger)
2 tbsp brown sugar
1/4 tsp of red pepper flakes
You can add the 1 cup of cashew nuts now or nearer to the end of cooking depending how crunchy or soft you like them. I put them in about 1/2 way through.
Cook on low for 4 hours
Add 3 chopped spring onions, stir it through & it’s done. I had mine with coconut rice, the kids had egg fried rice. This recipe is for 6 people but we’re a family of 3 & it’s pretty much gone 😯😳
