Steak and Kidney pudding made last night and it was delicious.
Can’t give amount for suet crust pastry as I tend to just put flour and suet in a bowl. Mix with water to form a dough.
Ingredients:
Flour
Suet
1 pound braising steak cubed
2 kidneys optional if you don’t like them.( lambs are quite small so I use pigs)
1 medium size onion chopped
2 Oxo cubes
1 desert spoon Gravy powder ( I use Bisto)
Water.
Method:
Grease a pudding bowl, mine was of the large side
Roll out dough onto a floured board and line the bowl
Layer steak, kidney and onion until you fill the basin.
Crumble oxo cubes and sprinkle over the top of meat with the bisto.
Fill the basin with cold water but not too near the top.
Roll out a lid and put on the top, make sure it’s big enough to go over the edge.
Cover with a piece of foil ensuring it has a pleat in the middle, and tie down with string.
Put in slow cooker and pour enough boiling water in to come at least half way up the side of the basin.
Cook on high for 6 hours.

Recipe of Basic Chicken curry from Scratch!!
Ingredients:
1 Kg chicken pieces, I prefer chicken on bone. Bone adds flavor to the curry or otherwise chicken thigh fillets if u don’t like chicken on bone.
2 medium sized onion finely diced.
4 Cloves of Garlic & 1/2 inch ginger finely diced or grated.
1 green Chilli
1 tin of diced Tomatoes
1 teaspoon cumin seeds
1 teaspoon cardamon powder.
2 teaspoon turmeric powder
2 teaspoon cumin powder
2 teaspoon coriander powder
1 teaspoon ground black pepper
2 teaspoon paprika powder.
Salt to taste.
1 can of coconut cream.
2 diced capsicum & 1 onion cut in thick squares.
1 cup of water.
2 tablespoons of coconut oil or olive oil.
Method:
On stovetop heat up the oil add cumin seeds let them crackle then add ginger garlic green chillies and onion and cook until onions are translucent then add salt & all the spices.
Next add the tin of tomatoes, cook the tomatoes until most of the liquid from tomatoes evaporate and you start seeing the oil on the sides of the sauce. Finally add chicken and sauté it for 5-8 minutes continuously stirring this will seal the chicken.
Now transfer this to the slow cooker add cup of water and a can of coconut milk and cook on low 8 hours or high 4 hours.
Lastly, Add diced capsicum & thick diced onion to the curry 1/2 hour before cooking time ends.
Garnish with coriander optional just before serving.
Just put it on today, I am using chicken drumsticks.
