Super Easy Chicken Nachos

Super Easy Chicken Nachos…

Tonight’s dinner, super easy chicken nachos. Top pic is the chicken after I got it out of the slow cooker and shredded it, bottom picture is finished result

Ingredients:
Approx 500 gram of chicken breast or chicken thigh
Half a packet of taco seasoning mix
1 jar of salsa

Method:
Cut the chicken into large chunks (usually I will cut a breast into thirds or a thigh in half)
Place in slow cooker with taco seasoning mix and salsa
Fill the salsa jar about 1/3 of the way with water and add that to the slow cooker too.
Make sure the chicken is all covered in the sauce. Cook on low for 3.5-4 hours.

Once cooked shred the chicken up (I usually use 2 forks for this)
On a microwave safe plate put a layer of corn chips, add chicken on top and then top with cheese. Microwave until cheese is melted to your liking.
Serve with a dollop of sour cream (I usually also add sliced shallots but didn’t have any)

  2ND Pulled Chicken Nachos Recipe 

Made Some AMAZING Pulled Chicken Nachos

ingredients:
3 Chicken breasts
Half a jar La Morena diced chipotle peppers in adobo sauce
1/4 cup honey
1/4 cup maple syrup
1/4 cup ketchup
2 minced garlic cloves
Lemon juice (optional)

About 2 bags tortilla chips
1 Red onion finely chopped
2 Tomatoes in small cubes
Parsley
Sour cream
Lots of cheese

Method:

Put all the ingredients in the slow cooker except for lemon juice. Put on low for 2/2,5 hours. Shred the chicken with two forks. If too spicy, add some lemon juice.
Put one bag of chips in a baking dish, add half of the chicken, a lot of cheese, half of the onion and half of the tomatoes on top. Put the other bag of chips on top and again chicken, cheese, onion and tomato. Put in the oven on 190°C for about 10 minutes or until the cheese is melted. Drizzle some sour cream on top and finish with parsley.
