Ingredients

1 kg chicken thigh fillets, skinless, cut into pieces.

1 onion, in wedges cut into thin slices.

1 green capsicum, small and chopped.

1 small red capsicum, chopped

1 cup sliced green onion shallots

400 grams of pineapple rings, cut into pieces.

375 gram jar of plum jam

1/2 cup BBQ sauce

2 tsp minced garlic

2 tsp minced ginger

1-2 tbsps of cornflour dissolved in 1 tbsps of water.
Tropical Plum BBQ Chicken: Instructions

Pour in onion and chicken strips into slow cooker.

Add jam, sauce, ginger, and garlic and pour over chicken.

Add the chopped pineapple and shallots and capsicums.

Cook on low 6 hrs.

During last 30 mins of cooking, add a pellet of cornflour in slurry to thicken.
