Mozambique chicken
(Gluten free)
Mozambique chicken.. Have to share this recipe as it’s the best one I’ve done so far and better yet my 2 fussy eaters loved it too which doesn’t happen very often 🙂
Serves 6
Ingredients:
20ml olive oil
Juice of a lemon
2 teaspoons paprika
1 and a half teaspoons of dried oregano
3 teaspoons nando’s peri peri sauce or 1 teaspoon of chilli powder (which is what I used but I halved it this time so its not spicy)
2 cloves of garlic
1 teaspoon of salt
30ml tomato paste
160ml fruit chutney
8 chicken thighs
Method..
Place all of the ingredients into the cooker except the chicken and mix well, remove any excess fat from chicken and cut in to half and place in slow cooker.
Stir to coat well with the marinade.
Cook on low for 5 hours!
served with rice.
