Chicken and Veggie Cashew & Coconut Curry

Made this is my slow cooker and it is amazing!!

Recipe:

6 chicken thighs – chopped up Put raw chicken on the base of SC – add any vegetable you want, I put potatoes, sweet potatoes, carrot, zucchini, broccoli, mushrooms, onion, spring onion, snap peas & throw in some frozen peas, corn & capsicum. – in a bowl your jar of desired curry paste and 1 can of coconut milk, whisk together and pour over meat and veggies. Cook on low for 8 hours. Stirring after 4 hours and then whenever you think of it. I love it! I do a yellow curry as well and my 2 year old daughter eats it all up!! Katrina OKeefe what curry paste did u use, looks soooo good used the Patak’s brand as it was on special at Aldi but otherwise I use Ayam or Valcom brands from coles. Usually get the yellow curry so everyone eats it and just cook a bit of rice to go with it. .. when do u add cashews pls Ma Puketapu that was the sauce I used but if I was putting them in I would throw everything in at the start!!
