Cheesy Chicken and Broccoli (Slow Cooker). This warm, cheesy slow cooker meal brings tender chicken and broccoli together in a creamy, golden sauce your whole family will keep asking for again and again!

Ingredients
- 25 ounces chicken breast, diced
- 2 pieces broccoli heads, chopped
- 1 cup mayonnaise
- 1 tablespoon seeded mustard (heaped)
- 4 tablespoons garlic
- 14.3 ounces cream of asparagus soup (canned)
- 2 tablespoons curry powder
- 1 tablespoon lemon juice (good squirt)
- 2 cups low-fat grated cheese
Cheesy Chicken and Broccoli: Steps
- Sear the chicken: Heat a pan on the stove and quickly cook the outside of your diced 25-ounce chicken breast, diced until it gets a little golden brown. This step is up to you — if you are in a hurry, you can skip it and put the raw chicken straight into the slow cooker. Both ways work just fine!
- Add everything to the slow cooker: Put your chicken into the slow cooker first. Then add the 2 pieces broccoli heads, chopped, 1 cup mayonnaise, 1 tablespoon seeded mustard (heaped), 4 tablespoons garlic, 14.3 ounces cream of asparagus soup (canned), 2 tablespoons curry powder, and 1 tablespoon lemon juice (good squirt). Give it a quick stir so everything is mixed together a little bit before you put the lid on.
- Cook low and slow: Put the lid on and cook on LOW for 240 minutes

. Give it a stir every now and then if you are around the house. The chicken is ready when it is soft all the way through and the sauce looks thick and creamy. - Add the cheese: When the chicken and broccoli are fully cooked, sprinkle 2 cups of low-fat grated cheese all over the top. Put the lid back on for a few minutes so the cheese melts down into the sauce and gets all gooey and delicious.
- Serve and enjoy: Scoop the cheesy chicken and broccoli onto plates and serve it hot over a big bowl of steamed rice. Make sure to spoon plenty of that yummy creamy sauce over the top!
Notes
You do not have to sear the chicken first — it is totally your choice! If your slow cooker runs hot like the Kmart multicooker, check the food a little earlier so it does not overcook. Feel free to add more or less garlic and broccoli depending on what your family likes. Low-fat cheese works best here because it keeps the sauce from getting too oily, but regular cheese is fine too.
