Family Favourite Chicken Curry. This super yummy chicken curry is our family’s go-to meal—tender chicken and potatoes swim in a creamy, spicy sauce made in a slow cooker. Kids love it mild with just 2 spoons of curry powder. Quick to start, then let it cook while you play. Serve over fluffy rice for cozy dinners!

Ingredients

1 to 1 1/2 pounds (450-600 grams) chicken thighs, chopped into 1-inch pieces

1 pound (450 grams) red or waxy potatoes, chopped into 1-inch pieces

One 15-ounce (440 ml) can chopped tomatoes

3/4 cup light cream, or coconut milk, or coconut cream

1 small onion, chopped small

1 tablespoon chopped fresh ginger

1-2 tablespoons curry powder (to taste—2 tablespoons works great for my kids)

1/2 teaspoon salt

Juice from 1 lemon (if you want)

1 cup peas
-
1-2 tablespoons sugar (if you like, to taste)

4-6 cups hot cooked rice, for eating with it
Family Favourite Chicken Curry: Directions

Get your slow cooker ready. Put the chicken pieces and potato pieces inside it.

In a bowl, stir together the chopped tomatoes, cream (or coconut milk/cream), chopped onion, ginger, curry powder, and salt. Taste it—add more curry if you want. (It might taste a bit salty now, but that’s okay because it’ll flavor the chicken and potatoes!)

Pour this yummy sauce over the chicken and potatoes. Put the lid on the slow cooker. Cook on high for 2 1/2 to 3 hours, or on low for 5-6 hours. Add sugar during cooking if you like it a little sweet.

Right before eating, stir in the lemon juice (if you want) and the peas. The peas will get warm from the heat already in there.
