Carbonara Chicken Meatball Subs. Yummy chicken meatballs cooked in creamy carbonara sauce — easy to make, fun for kids, and perfect stuffed inside soft sub rolls or served with fresh veggies!

What You Need

  • 500g chicken mince
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ½ teaspoon cracked black pepper
  • ½ teaspoon salt
  • 2 teaspoons minced garlic
  • ½ cup panko breadcrumbs
  • 1 bottle of your favorite store-bought carbonara sauce

How To Make Carbonara Chicken Meatball

  1. Put the chicken mince, rosemary, thyme, pepper, salt, garlic, and breadcrumbs into a big bowl. Mix everything together really well to make your meatball mix.
  2. Wash your hands but keep them a little wet — this makes rolling the meatballs much easier and way less sticky!
  3. Roll the mix into small round balls, about the size of a golf ball. You should get around 20 meatballs.
  4. Pour all of the carbonara sauce into your slow cooker and spread it around the bottom.
  5. Carefully place each meatball into the sauce, one by one. Try to be gentle so they don’t break!
  6. Put the lid on using The Tea Towel Trick and cook on low heat for 3 hours.
  7. Do NOT stir or move the meatballs until the very last hour of cooking. If you move them too early, they can fall apart because they haven’t firmed up yet.
  8. Once they are done, place the meatballs into soft sub bread rolls for a super easy and yummy dinner.
  9. Not feeling subs? You can also serve the meatballs on a plate with fresh veggies on the side — whatever you like!
